Chief Chef 

Department: F&B Production

Reports to: Restaurant Manager

Direct Reports: Sous Chef (Annex), Pastry Chef, cooks and Stewards 

Job Purpose

To manage and coordinate the operations of the kitchen in a manner that ensures consistently high culinary, safety and hygiene standards are maintained and operational costs are contained.

  • Up to date SOPs displayed and in use in the kitchen at all times

Key Duties 
  • Develop and implement kitchen performance standards and other specifications in line with best practice and ensure compliance to such standards by the kitchen team.
  • Document and implement standard operating procedures (SOPs), and review and initiate remedial action as and where needed.
  • Develop, document and cost standard recipes and train all the staff
  • Ensure a cost effective and sustainable operation through on-going budgetary control, cost review and the implementation of cost saving initiatives.
  • Continually monitor and control the usage of supplies and operating equipment and ensure that inter-departmental and intra-departmental controls are maintained
  • In liaison with heads of sections plan the daily menu, brief staff and coordinate production
  • Monitor kitchen opening and closing duties including requisition of provisions and hygienic storage of food
  • Ensure all the standing orders i.e. for special dietary requirements, baby food or off menu items are well made and on time
  • Requisition food stock items from the store, receive deliveries and check on quality, quantity and prices
  • Ensure correct portioning, quality and proper presentation of food to the clients
  • Monitor and ensure hygiene and safety standards are maintained within the kitchen, check the cleaning activities of the stewards and staff personal hygiene
  • Plan, organise, allocate and co-ordinate the work of the team including preparing duty rosters, off and leave schedules.
  • Gather feedback and comments from guests, review and put in place remedial action
  • In liaison with maintenance, coordinate timely repairs of faulty equipment
  • Stay abreast of developments and trends in food production and adopt those that add value to Fiesta.
  • Lead, motivate, develop and control staff continually assessing the competence of the team and offer coaching support and training as needed,
  • And any other duties that may be assigned from time to time
Knowledge/Skills/Experience
  • Diploma/Certificate in food production from Utalii College or equivalent
  • 7 years experience in a similar role
  • Specialised training in people management/leadership
