Job Purpose: To provide the highest possible standard of cocktail / bar /
wine service to the guests ensuring high level of satisfaction
Duties:

Bar Service according to the business
quality and service standards.

To have complete knowledge of the
cocktails / drinks / wines as listed and their presentations.
·
To be aware of work schedules,
company guidelines and regulations regarding uniform, grooming, and hygiene
policy.
·
To ensure all drinks, which are
served, to clients and employees are charged to and signed for by the
individual requesting the drink.
·
Safety and Cleanliness of Bar and
surrounding areas.
·
Creating a harmonious Environment
amongst all staff within the Restaurant.
·
Prepare bar for service with adequate
supplies of glassware, drinks, bottles, fruit and garnishes.
·
Wash and polish glassware, bar
equipment and bar area.
·
Maintain equipment and advice on
repairs or improvements needed for greater efficiency.
·
Ensure responsible service of Alcohol
policies is implemented.
·
Maintain high hygiene and cleanliness
standards.
·
Efficiently use the Point Of
Sale(POS) System
·
Properly account for bar sales at the
end of the shift.
Qualifications:
·
Over 2 years’ experience in a Hotel /
Restaurant
·
Team management, leadership &
team player
·
Training in Bar Techniques will be an
added advantage.
·

Job
Purpose: The Cook shall be responsible for
portioning, preparing and cooking food products as per instructions and/or
recipes.
Specific
Duties and Responsibilities
·
Portioning food products prior to
cooking according to standard portion sizes and recipe specifications;
·
Preparing dishes as needed;
·
Maintaining proper storage
temperatures, cooling, freezing and reheating;
·
Operating kitchen equipment and
inspecting equipment for cleanliness;
·
Serving food, salad, bread, main dish
items, sandwiches and other food items in appropriate portions.
·
Replenishing supply of food items on
serving line;
·
Lifting milk crates in and out of the
cooler;
·
Storing and/or disposing unused food;
·
Maintaining necessary supplies and
goods for assigned meals;
·
Following recipes, portion controls
and presentation specifications as set by the establishment; and
·
Performing any other duties assigned
from time to time.
Minimum
Qualifications
·
Certificate/Diploma in Food
Production or its equivalent from a recognized institution;
·
KCSE Grade C- (Minus) or its
equivalent;
·
One (1) year working experience in a
comparable position.

Job Purpose: To supervise and control restaurant and bar to ensure
prompt service and increase guest satisfaction by proper co-ordination of bar, restaurant,
and banqueting services.
Ensure all staff in the department
adhere to the laid down SOPs and policies and exhibit F&B service core
values thereby guaranteeing “GUEST DELIGHTFUL EXPERIENCE”.
Duties:

Ensure that staff adhere to the laid
down hotel standard operating procedures & Policies.
·
To ensure table appointments,
including flower arrangements, are impeccable and set correctly.
·
To ensure that stations have their
correct mise-en-place.
·
To ensure that faults and defects are
reported to Maintenance and actioned without delay.
·
To maintain high standards of morale
and personal appearance of service staff.
·
Liaise with customers regarding
special functions.
·
To be aware of all statutory
regulations affecting safety and ensure that any safety hazard is rectified.
·
To ensure regular stocktaking of all
operating equipment at specified intervals.
·
To ensure that operating equipment is
used properly and not abused, e.g. serviettes and waiters’ cloths used for
cleaning.
·
To ensure effective communication by
attending meetings as required and holding staff meetings on a regular basis to
impart information.
·
To hold regular On-the-Job training
sessions to ensure that staff can perform their duties correctly.
·
To give feedback on guest letters and
comments.
·
To maintain a high degree of interest
in self-development, displaying this by making suggestions for realistic
improvements.
Qualifications:

recognized institution

Over 3 years’ experience in a busy
hotel as an F&B Supervisor
