Sous Chef
AFEX, a Lonrho company, provides camp
construction, catering, management and logistics support to the Oil and Gas,
Mining, UN and NGO sectors, in some of the most remote corners of Africa. With
headquarters in Nairobi, Kenya, AFEX provides international standard service
delivery, combined with 30 years of regional operational experience.
We are looking for a Sous Chef who
will have a real impact on the quality of food, who will be creative and have
flair in presenting the food and who can train the other staff to the same
standard of cuisine.
Works alongside Executive Chef to
manage daily kitchen activities, including overseeing staff, aiding with menu
preparation, ensuring food quality and freshness, and monitoring ordering and
stocking. consistency by following designated recipes.
Key Duties
·
Participate and assist in maintaining
Kitchen operations to the highest standard and quality
·
With the Executive chef approval and
supervision assist in the following:
·
Developing and costing menus based on
AFEX standards and client’s needs
·
Plan and order food ingredients to
ensure sufficient stock for menu ensuring right quality and quantity
·
Ensure that sufficient stocks of food
and beverages are being held in the stores and that the store man is
maintaining up to date inventory records
·
Make sure that all food leaving the
kitchen is checked for quality, quantity, temperature and presentation
Kitchen administration, including checking the stores and fridges weekly
Kitchen administration, including checking the stores and fridges weekly

Ensure HACCP procedures are met at
all times, seeking input from the QHSE officer if necessary
·
Ensure the kitchen and food areas are
maintained to AFEX’s and Client’s standard of hygiene and ensure that all
statutory regulations
·
Report any equipment and maintenance
problems to the Head Chef immediately and follow up in writing
·
Build good relations between
restaurant and kitchen staff sorting out issues quickly and ensuring that all
major problems are reported to the Manager immediately
·
Carry out training for all kitchen
staff on health & safety standards, technical requirements for kitchen
equipment and food preparation techniques
·
Ensure that regular on-the-job
practical cooking training is carried out, to improve staff performance and
productivity
·
Work in full accordance with AFEX
Group policies, procedures, work instructions and all relevant elements of AFEX
Management Systems
·
Work with the senior waiter to ensure
all clients are served as quickly as possible and efficiently
Qualifications
·
Degree in food production or related
field.
·
Diploma in F&B service
·
HACCP certification
·
Function and Event catering
experience
·
More than 5 years’ experience in a
similar environment
·
Willingness to work in South Sudan
·
Good communication skills
·
Able to work as an individual and in
a team
·
Good customer service skills
·

results.
Food & Beverage Manager

delivery, combined with 30 years of regional operational experience.
The AFEX Team is dedicated to
ensuring clients have peace of mind that their projects will run on schedule
and to budget, with their personnel being cared for to a high international
standard. AFEX wishes to recruit a competent, innovative and self-driven person
to fill the following position:
In charge of all things related to
the kitchen, restaurant and the bar including menu creation, dish presentation,
bar inventory, front of house and management of staff. Working with the
Executive Chef to oversee the food that is prepared in the Kitchen, and helping
in maximizing the productivity of Chefs and the kitchen staff.
Plan menus and coordinate the
operations of the Kitchen, restaurant and bar. Oversee the inventory and stock
of all items needed in the kitchen, bar and restaurant.
Duties
·
Overall in charge of the restaurant,
ensure that the restaurant is ready for the meal service, coordinate with the
Chefs to minimize service time
·
In charge of the general cleaning and
maintenance of the restaurant/kitchen/bar equipment Maintain proper and
accurate cleaning schedule for all equipment
·
Report equipment failures to the
maintenance supervisor as well as keep track of service schedule.
·
Organize and supervise the waiters
before/during/after meals to ensure that the client get high quality service as
stated in the contract.
·
Ensure that regular on-the-job
training is carried out, so as to improve staff performance and productivity
·
Work with the senior waiter to ensure
that shifts are planned and all clients are served as quickly as possible and
efficiently.
·
Ensure that staff work as per the
stated working schedules and monitor work plans and keep track of staff time
sheets
·
Follow up with the Chefs to make sure
that all food leaving the kitchen is checked for quality, quantity, temperature
and presentation
·
Together with the Executive Chef
create a cycle menu, cost the menu and prepare food order based on the menu
·
Ensure that the Chefs are familiar
with the day’s menus and that the raw supplies are available in the kitchen.
·
Maintain an efficient FIFO system in
the departments
·
Ensure that sufficient stocks of food
and beverages, minimize wastage
·
Audit your departments & address
issues raised, check food standards and ensure that all kitchen staff meet
regulations.
·
Handle any client complaints,
ensuring that the issue is resolved and that the client receives feedback
·
Monitor and evaluate staff
performance, identifying areas which need development and help them to improve
·
Train AFEX employees to enable them
provide quality service to the clients
·
Work in full accordance with AFEX
Group policies, procedures, work instructions and all relevant elements of AFEX
Management Systems
QHSE
·
Ensure that food temperature logs
SOPs are adhered to and relevant backup documents are available for audits.
·
Ensure HACCP is followed at all
times, seeking input from the QHSE officer if necessary
·
Ensure the kitchen and food areas are
maintained to AFEX’s and Client’s standard of hygiene and ensure that all
statutory regulations are met
Finance
·
Ensure that Cost of good is at the
required levels
·
Maximizing sales and ensure that the
company is profitable
·
In charge of the departmental budget
and establishing financial targets and forecasts and identify way in which the
company can save
·
Achieve company’s financial targets
Qualifications
·
Degree in food production or relevant
field
·
Diploma in F&B service
·
Must have experience of bar work and
bar inventory
·
HACCP certification
·
Willingness to work in South Sudan
·
Min 5 years management experience in
hotel industry with a very good knowledge of food production
·
Must have event and function
experience
